Rebedding stainless into varnished mahogany

Tips needed. I'm used to rebedding stainless into fiberglass, but have just purchased a Fratelli Aprea and need to re-varnish her caprails and some sideboards. As I have to remove all of the stainless to varnish, how do I rebed the stainless in the mahogany? I currently have rotted mahogany that needs to be replaced from the previous owner bedding stainless incorrectly. Suggestions? Thanks. MKK
