gas economy twin 4s vs v8

looking to purchase a 28 ft +/- cabin cruiser and get back into boating after a 20 year hiatus. At close to $4 gal, any opinions on which engine I/O setup would uses less gas - twin four cylinders or a single V8 (5.7 or 454).
